Whether you’re a fitness junkie like me, who needs food regularly, or someone who is constantly tight for time and wants a filling, healthy snack – these protein packed cookies are super easy to make and always there waiting for you in a box. Just whip up a batch over the weekend and take one with you to work every day. If stored in an airtight container or glass jar they will last a week easily. (Once the weather gets warmer you may want to put these cuties in the fridge)

Makes about 15 cookies

Protein Cookie Ingredients:

½ cup applesauce*

¼ cup honey or agave nectar

½ cup peanut/ almond butter**

¼ cup water

1 Tbspn vanilla extract

1 egg

½ Tspn baking soda

¼ Tspn sea salt

1 Tspn cinnamon

½ cup mixed flour (I used part oat flour and part gluten free flour)

4 scoops vanilla protein powder

½ cup of oats

½ cup dried fruit ( I used raisins, and put a little less than ½ a cup)

2-3 cups of your favourite granola

¼ cup ground flaxseed

1 Tbspn raw cacao powder (optional)

100grams dark chocolate, melted for drizzling (optional)

 

*basically babyfood…this stuff replaces butter and binds the ingredients

** Please use proper nut butter! The ingredients should say, example: 100% peanuts only (you don’t want added oils and fats and words you can’t pronounce in there)

 

How to make the protein cookies:

Firstly preheat the oven to 190 degrees Celsius.

In a big bowl mix the applesauce, honey, peanut butter, vanilla essence, water, 1 egg, protein powder, baking soda, cacao powder, salt, cinnamon and flour. Combine this concoction well 🙂

Now simply add the dried fruit, granola, milled flaxseed and oats and stir everything together.

On a greased (I just brushed a little coconut oil) baking paper sheet put about 1 large tablespoon of cookie mixture per cookie. Make sure you space them out evenly (remember they get a little larger when they start to bake). Pop them in the oven and bake for approximately 11-15mins. This does depend on your oven…so after they’ve been in for 10mins just keep a close eye on them. They should look golden on top…not burnt 🙂

Once you’ve taken them out, let them cool, and if you’re adding the melted dark chocolate, now is the time to drizzle away! Let the chocolate harden before you store them.
